Exactly what the title says. 300 different ways to cook eggs and omelets, although the author seems to be “cheating” with some recipes, e.g., Curry Omelet and Onion Omelet have almost exactly the same recipe, except the latter calls for “omitting curry and rice”. Other recipes are quite intriguing, such as “Rum Omelet” and “Brain Omelet”. Egg connoisseurs might want to experiment with more complex recipes for “Stuffed Eggs a la Madras”, “Eggs a la St Jacques”, and “Chaud-froid of Eggs”. Includes instructions to the proper ways to test the freshness of eggs, to make plain omelets, and recipes for invalids and convalescents.
